Crust:
1 banana
1 c oats
2 tbs flaxseed
2 tbs coconut sugar
Blend oats, flaxseed and sugar together until fine. Add to bowl and mix in banana until dough forms. Roll out dough into lightly greased cookie pan. Bake around 15 minutes on 350.
Cream:
13 medjool dates
1 c water
Blend in high speed blender until creamy.
Fruit Sauce:
2 c watermelon juice
2 tbs coconut sugar
2 tbs arrowroot powder
1-2 tbs lemon juice
Stir everything together in sauce pan over low-medium heat until thick.
Add:
2 bananas, sliced
1/2 – 1 c strawberries, chopped
Mix all together.
Spread cream on crust. Add fruit sauce layer. Sprinkle shredded coconut on top. Refrigerate for a couple hours.
