Vegan Chili

1 small sweet potato

1 small yellow potato

1/2 block firm tofu

1 can red kidney beans, drained and rinsed

1 can fire roasted tomatoes

2-3 tbs chili powder

1/2 – 1 tsp cumin

1/2 – 1 tsp garlic powder

1/2 tsp sea salt

1 tbs apple cider vinegar

Cook potatoes in water in skillet until barely soft. Add tofu, beans and roasted tomatoes. Add spices and vinegar. Mix well. Add some water (about a cup) and bring to boil. Turn heat down and let simmer for 10-15 minutes.
